EASY + DELICIOUS WEEK NIGHT DINNER || home made pizza

I struggle with getting dinner on the table in the summer months! One of my favorite, easy-to-get-on-the-table dinners is…home made pizza! I don’t really follow a recipe for my crust; it’s a mixture of sourdough discard, flour, honey, avocado oil, salt and water. I make the crust in the morning (takes less than 5 minutes) and let it sit all day. HERE is a similar crust recipe.

Then, 30 minutes before we want to eat dinner, I just have to roll out my pizza dough, spread the top with oil and balsamic vinegar, and top with our favorite toppings! I always have ground beef thawing in the refrigerator, so our pizza usually includes ground beef - TACO pizza is my favorite!

Here are a handful of my favorite pizza toppings:

~ cooked ground beef

~ home made ricotta, or soft cheese

~ fresh veggies: onion, tomato, mushrooms, bell pepper, artichoke…whatever is in the refrigerator!

~ for taco pizza, I spread refried beans on the crust, and add a soft cheese. Bake for about 15 minutes, then pull the dough out of the oven, top with COOKED ground beef and plenty of shredded cheddar cheese. Pop back in the oven and bake for a few more minutes. Once the pizza is cooked, take it out of the oven and top with chopped lettuce, sliced tomato, onion, olives, and avacado!

In general, I bake the pizza at 425 for 15 minutes. If you are lucky, you will have left overs for lunch the next day :))
