EASY + DELICIOUS WEEK NIGHT DINNER || beef + flat bread
/I love a good easy, delicious and healthy week night dinner “go to” and this definitely checks all the boxes!! My friends over at Creambrook Farm sent this delicious dinner idea in their newsletter a few months ago, and it kind of morphed into this…..
This dinner is easy! And you can add your own spin to it!
Start with sautéing your veggies in butter. Remove the veggies from the pan and add your ground beef. Cook ground beef and season with salt and pepper to taste. Add the sautéed veggies back to the pan and keep warm.
While sautéing your veggies and cooking your beef, make your flat bread dough. I try to cook my flat bread as I am cooking the veggies and beef so everything is done at the same time. When I approach it that way, dinner is done in 30 minutes!
INGREDIENTS
3 bell peppers, sliced
2 red onions, sliced
1 clove garlic, minced
1.5 pounds of ground beef
Sautee vegetables. Remove from pan and cook ground beef. Add vegetables back to pan when beef is cooked. Season with salt and pepper.
FLAT BREAD INGREDIENTS
3 cups all purpose flour
2 tsp baking powder
1.5 tsp salt
3 TBSP olive oil
1 cup ice water
2-3 TBSP avocado oil or raw butter for frying flatbreads

FLAT BREAD DIRECTIONS
In a bowl, stir the flour, baking powder and salt. Mix in olive oil and ice water. The dough will be soft, add water of flour if needed. Shape into a soft ball of dough. Cover with a towel and let rest for 15 minutes. Heat cast iron skillet on medium heat. Divide dough into 6 equal pieces. Flatten and roll out dough, I aim for the size/thickness of a tortilla. Apply butter or oil to skillet. Add flat bread to skillet and cook 1-2 minutes per side, until cooked and lightly browned. Keep cooked pieces warm.
DRESSING INGREDIENTS + DIRECTIONS
1 cup plain Greek yogurt ( I use home made)
Ranch dressing mix ( I have the large mix from Costco)
1/4 cup fresh or 2 TBSP dry dill
In a bowl, mix Greek yogurt with Ranch dressing mix ( I use about 1-2 TBSP) and dill.
What I love about this dinner is that it can easily be modified!!!! Use whatever meat you want, sauté whatever veggies you want, add to home made flatbread and make some sort of dressing or dip. I use Greek yogurt as the base for most of my dips and dressings. I know that it’s full of protein and I love that I can add so many different flavors to it to go with whatever I am cooking.
